    為驗(yàn)證分析Biot數(shù)-遲滯因子(Bi-G)關(guān)系式估算生物介質(zhì)熱風(fēng)干燥的對(duì)流傳質(zhì)系數(shù)與水分?jǐn)U散系數(shù)可靠性,首先采用指數(shù)函數(shù)對(duì)胡蘿卜切片干燥實(shí)驗(yàn)數(shù)據(jù)進(jìn)行擬合,利用Bi-G關(guān)系式估算其對(duì)流傳質(zhì)系數(shù)與水分?jǐn)U散系數(shù);然后采用該估算值,通過生物介質(zhì)內(nèi)部水分?jǐn)U散遵循Fick第二擴(kuò)散定律、生物介質(zhì)-熱空氣間遵循對(duì)流傳質(zhì)的干燥模型,對(duì)熱風(fēng)對(duì)流干燥胡蘿卜切片水分變化進(jìn)行了數(shù)值模擬計(jì)算,并對(duì)數(shù)值模擬計(jì)算值與干燥實(shí)驗(yàn)數(shù)據(jù)進(jìn)行了比較。結(jié)果表明:指數(shù)函數(shù)對(duì)干燥實(shí)驗(yàn)數(shù)據(jù)擬合曲線與干燥實(shí)驗(yàn)數(shù)據(jù)吻合不是Bi-G關(guān)系式精確估算對(duì)流傳質(zhì)系數(shù)與水分?jǐn)U散系數(shù)的充分條件,Bi-G關(guān)系式不能用來精確估算對(duì)流傳質(zhì)系數(shù)與水分?jǐn)U散系數(shù)。

    Abstract:

    In order to validate and analyze the reliability of Biot number-lag factor (Bi-G) correlation to estimate convective mass transfer coefficient and moisture diffusion coefficient of biological material under hot air drying, the drying experiment data of carrot slice is fitted by the exponential function, and the convective mass transfer coefficient and the moisture diffusion coefficient are estimated by Bi-G correlation. Then, the estimated values are used to simulate moisture change of carrot slice in the drying model, in which the internal moisture diffusion follows the Fick’s second law of diffusion, and the mass transfer between the biological medium and hot air follows the convective boundary condition. The calculated values are compared to the drying experiment data. The results show that the exponential function fitting drying experimental data well is not the sufficient condition for the Bi-G correlation to accurately estimate the convective mass transfer coefficient and the moisture diffusion coefficient. Bi-G correlation can not be used to accurately estimate the convective mass transfer coefficient and the moisture diffusion coefficient. 
