    摘要:

    食源性疾病是公共衛(wèi)生關(guān)注的主要問題。根據(jù)2015—2019年我國豬肉產(chǎn)品抽查數(shù)據(jù)(n=22340),開展了一項(xiàng)關(guān)于豬肉產(chǎn)品的質(zhì)量安全影響因素分析,評(píng)估我國豬肉產(chǎn)品市場的安全狀況。結(jié)果顯示,豬肉產(chǎn)品不合格率從2015年的10.87%下降到2019年的2.44%,這意味著近年來我國豬肉產(chǎn)品的安全性有了很大提高。通過對影響豬肉產(chǎn)品安全的主要因素進(jìn)行分析,發(fā)現(xiàn)添加劑的檢出率為1.62%,是影響豬肉產(chǎn)品安全的主要因素之一。其次,微生物污染和獸藥殘留也是影響豬肉產(chǎn)品安全的重要因素,與受季節(jié)和溫度影響的微生物污染不同,獸藥殘留水平主要與動(dòng)物疾病有關(guān)。此外,重金屬污染雖然只占所有抽樣產(chǎn)品的0.17%,但與其他因素相比,重金屬污染與原料養(yǎng)殖環(huán)境污染密切相關(guān),可能會(huì)在很長一段時(shí)間內(nèi)對產(chǎn)品安全產(chǎn)生持久的影響。

    Abstract:

    Foodborne diseases are of major concern for public health. A study on pork products was undertaken to assess the safety status of pork products in China market based on spot check data of pork products in China from 2015 to 2019 (n=22340). The results showed that the percentage of unqualified pork products was decreased from 10.87% in 2015 to 2.44% in 2019 which meant the safety of pork products in China was improved greatly in recent years. According to the statistics on the main factors affecting the safety of pork products, it was found that additives were the main factors affecting the safety of pork products since the detection rate of the additive was 1.62%. It was mainly affected by the type of pork products and the production process. The results also showed that microbial contamination and veterinary drug residues were the main factors affecting the safety of pork products. However, different from microbial contamination, which was affected by season and temperature, the level of veterinary drug residues was mainly related to animal diseases. In addition, heavy metal pollution may have a lasting impact on product safety in a long period of time compared with other factors for it was closely related to environmental pollution of raw material cultivation, although it accounted for only 0.17% of all sampling products.
